Hachis Parmentier
Hachis Parmentier is the french version of a Sheperd’s Pie. It is a pie made of minced meat with a crust or topping of mashed potatoes. Maybe when thinking of French food this pie doesn’t come to mind but it has been popular in France since the 17th century when Antoine Parmentier convinced King Louis XVI that this dish could fight famine.
Hachis Parmentier is a very easy dish to make at home and you can easily make a vegetarian version by using vegetables instead of the ground beef (also delicious).

Ingredients for 3/4:
Ground beef - 600gr
Potatoes - 1kg
Onions - 2
Garlic - 1 clove
Carrot - 1
Butter - 30gr
Grated cheese (Gruyère) - 60gr
Ripe Tomatoes -2
Ground nutmeg
Parsley - 5 springs
Salt & pepper
How to:
Start pre-heating the oven at 210ºC.
We start this recipe by boiling the potatoes to make the mashed potatoes. Peal the potatoes and cut them in big pieces. Boil them for 25 min until they are tender. Drain the potatoes and while they are still hot crush them into a pure with a fork. Mix them with the pre-heated milk and 30gr of butter. Season with salt, pepper and ground nutmeg.
Peel and slice in small pieces the onions and the carrots. Do the same with the garlic but cut it in even smaller pieces (0.5mm). Grate the tomato with a cheese grater. Chop the parsley sprigs.
Once you have all ingredients ready, in a pan, melt 30gr of butter and cook the onionsuntil they are brown for 5 min. Add the carrots, the minced beef and the garlic. Season with salt and pepper. Cook for 5 min and add the grated tomato and the chopped parsley. Cook for another 10min.
In a baking tray spread the minced beef at the bottom. Cover with mashed potato and sprinkle with the grated cheese on top. Cook until the cheese is gratin golden at 210ºC (20-30min).
